New shapton pro 1000 grit ceramic sharpening stone jp


New Shapton Pro 1000 grit ceramic Japanese whetstone measuring 210mm x 70mm x 15mm.
A fast cutting stone that is a fired ceramic with abrasive particles, it does not require soaking and wears very slowly staying flat a long time. Unlike the previous Shapton M-15 stones the Pro series stones have more abrasives and do not have the problems 'loading' or becoming clogged with metal on the surface. Unlike many ceramic sharpening devices (rods or bench stones) which are totally fused and dull over time this stone is very slightly friable; the surface wears off during sharpening to reveal fresh abrasive keeping the same particle grit throughout the life of the stone. It wears much much slower than other Japanese stones and retains a very fast cutting grit which importantly does not leave a deep scratch pattern and is ready for medium finish stone in most cases.
The box for this stone has rubber feet and grooves on the top to serve as a stone holder, I prefer a clamping rubber holder but this does work fine, there is a little jiggle but it stays there.
This is my new favorite stone for use in my sharpening service, dulled but undamaged (no nicks or chips in edge) kitchen knives can be quickly re-sharpened on this stone and followed with a 3000 grit stone and a strop an excellent edge is produced.
